Raw Broccoli Salad

This crunchy, sweet raw salad is perfect for anything from an appetizer at a barbecue to light lunch on a hot summer day.

Ingredients :

1 large head broccoli

8 slices cooked bacon, crumbled

1/2 cup finely diced red onion

1/2 lb. sharp cheddar cheese, grated

1 cup low-fat mayonnaise

2 tbsp. rice wine vinegar

1/4 cup white sugar

1 cup cherry tomatoes, halved

Directions :

Wash the broccoli well, trim off the large leaves and cut the florets into small pieces. Peel the broccoli stem and slice thinly.

Combine broccoli, cheese, onion and bacon in a large bowl; stir to combine well.

In a small bowl, combine sugar, vinegar and mayo; pour the mixture over the salad ingredients. Chill for about 4 hours to allow the flavors to blend.

When ready to serve, add the cherry tomatoes and stir to combine well. Enjoy!
